Wild Rice Salad

Items needed to make this:

  • 6 ounces blanched slivered almonds
  • 1 cup seedless red grapes
  • 1/4 cup diced green onion
  • 2 cups cooked, cubed turkey meat
  • salt and pepper to taste
  • 1 teaspoon white sugar
  • 1 teaspoon white vinega
  • 3/4 cup light mayonnaise
  • 1 (6 ounce) package wild rice

Very easy 1,2,3 step cooking.

1. Cook the rice according to the package of the rise.
2. Take a medium sized bowl, whisk togheter the salt, peppar, sugar, vinegar and mayonnaise. Stir in grapes, onion and turkey until evenly coated with dressing. Cover and cool down in fridgerator 1-2 hours.
3. Before serving, sprinkle slivered almonds over the top of the salad.

Tips: This can also be served with chicken or fish.

Spicy Chicken Soup

To make this soup you will need following:

  • 1 container sour cream
  • 2 cans chili beans, undrained
  • 1 can whole kernel corn, drained
  • 3 tablespoons chili powder
  • 1can condensed tomato soup
  • 1can whole peeled tomatoes
  • 2 cans peeled and diced tomatoes
  • 1 jar chunky salsa
  • 3 cloves garlic, chopped
  • 1 onion, chopped
  • 3 tablespoons olive oil
  • 5 cubes chicken bouillon
  • 1 tablespoon onion powder
  • 2 tablespoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 8 skinless, boneless chicken breast halves
  • 2 quarts water

Take a large pot and cook in medium heat fallowing:

water, bouillon cubes, onion powder, parsley
garlic powder, chicken, salt and pepper.
Bring to boil, then simmer for an hour, or just until chicken juices run clear.
Remove chicken, reserve broth. Shred the chicken.

Use a large cooking pot, it should be over medium heat, cook garlic and onion in the olive oil,
until it reaches nice golden-brown colour.

Stir in shredded chicken, the chili beans (yummy), sour cream, chili powder, corn, tomato soup,
diced tomatoes, whole tomatoes, salsa and 5 cups of broth.
Simmer for 30 minutes.

Flavored Green Beans

For about 4 serving you are going to need following:

  • Salt to taste
  • 1 tsp oregano
  • 1 tsp black pepper
  • 1 8 oz can tomato sauce
  • 2 Tbs olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 lb green beans, washed and trimmed and cut into 2-inch pieces

Seam the beans for about 8-10 minutes, until tender crisp.
Saut garlic and onion in a small frying pan for about 3 minutes.
Add seasonings and tomato sauce.
Cook again for about 5 minutes.
Add the beans and stir, to blend the flavors, heat trough.

Ready to serve, this is really nice with something cool to drink.

Vegetarian Vegetable Soup

Vegetables

For about 4 servings you are going to need fallowing:

  • 1 Tbs olive oil
  • 3 cloves garlic, chopped
  • 1 tsp oregano
  • 1 tsp soy sauce
  • 1/2 tsp each salt and pepper
  • 2 cups of tomato juice
  • 2 cups of water
  • 1/2 cup onion
  • 2 stalks celery, cut into 1-inch slices
  • 2 medium carrots, cut into slices

Place celery, onions and the carrots with 1 cup of water in a blender.
Continue blending until it is smooth.
Now combine the rest of the ingredients except for olive oil to a saucepan,
bring to a boil.
Cover and simmer for about 5-6 minutes.
Then remove from heat and stir in olive oil, not to much do.

Ready to serve! Live a healthier life style!

Lentil Soup

This is what you will need for about 8 servings.

  • 2 Tbs of olive oil
  • 4 cloves garlic, need to be chopped
  • 2 stalks of celery, wash them, chopped 2 cups of dried lentils
  • About 8 cups of water
  • 1 bay of leaf
  • 1 small can tomato paste
  • 2 carrots, need to be chopped
  • 4 cups of shredded spinach
  • 2 medium size onions, chopped
  • 3 Tbs lemon juice
  • White pepper and salt

Do following:

Take the olive oil and heat it up in a large saucepan.
Saut the onion until it is soft.
Now add all remaining ingredients except for spinach and lemon juice.
Now mix well.
Put it all in a boil, cover and simmer for about one(1) hour.
Now add spinach, peppar and salt, cook for 10 more minutes.
Stir in lemon juice.

Ready to serve! Enjoy a healthier life style!
